Silvia Barretto and her spouse, Marcos Croce, own the farm, Fazenda Ambiental Fortaleza (FAF), which means “environmental fortress farm”. This certified organic (USDA and IBD), Red Catuai variety coffee is washed processed before it is dried at the farm. This coffee tastes like cherry, vanilla, and fudge. It is low acid and heavy, and can take cream and sugar well. Silvia’s coffee is full bodied as an espresso, and is more dynamic and lively than most Brazilian espressos that we’ve tasted. As an espresso it is sweet, creamy, and tastes like vanilla and cherry. We serve it at our cafe as espresso, but also enjoy drinking it as a medium to full bodied filter coffee.
