Christian Starry and his family own the wet mill and farm, Lirios de Belén, which means “Lillies of Bethlehem”. This washed Bourbon coffee is soaked for 12-36 hours before drying on patios and raised beds for 3 weeks. This dense coffee tastes like Swiss Chocolate, caramel, nougat, and light citrus. It’s sweet and medium bodied, with low to medium low acidity. It takes cream and sugar well, and has more than enough nuance if served black.
